1 onion chopped in small pieces
3 tablespoons butter
3 tablespoons of olive oil
1 head of cauliflower chopped into small pieces
1 quart of chicken stock
1/4 cup whipping cream
Salt and pepper to taste
OPTIONAL: 1 tablespoon truffle oil or add pesto to each bowl
In a pot add the olive oil and butter until heated, add onions. Sweat for a few minutes.
Add 1 teaspoon of the truffle oil to the onions and continue to sweat for 2-3 minutes.
Add the cauliflower and chicken stock.
Bring to a boil, then reduce heat and cover on a gentle simmer for 30 minutes.
In batches use a blender to puree for one minute.
Add the whipping cream and season with salt and pepper.
