Lamb Chops are one of my favorites and are extremely healthy at that. Again, one of those easy recipes you just slap on some garlic, thyme, salt and pepper then throw on the grill. If your blood type is B+ your are in luck, lamb chops are your friend. I learned that many years ago and it is such an important part of your genetic makeup. Blood type books are in book stores are worth the read to get more information on the importance of our blood and nutrition.
I am going to go off on a little tangent here for a second and talk about the fact the most lamb we eat is New Zealand Lamb or Australia. This is good! New Zealand raises their lamb in the pasture which means grass fed, unlike some other not to be named country that I most likely live in. This is crucial for many reasons, First it is not fed the usual grains (corn, soy etc.) so we will not be eating and digesting the corn and soy the lamb ate. You are what you eat ate. Second, pasture raised lamb then become omega-3 rich. What? Yes!! Lamb is rich in omega-3s and gives us wonderful doses of fatty acids that are full of heart health, brain health and lung health to name just a few. Our bodies do not produce omega-3 on our own so we truly need to eat these essential nutrients. This is a healthy fat, it is your friend so let us thank the omega-3 for a job well done. Tasty too. The other benefit we get from lamb is that it contains all 9 amino acids we need for growth and maintenance, has a very good dose of B12, B3, zinc, niacin and the list goes on. 1 rack of lamb
2 cloves of garlic minced
2 teaspoons of chopped Thyme
Salt & Pepper
Heat your grill
Slice the rack of lamb in between in each bone to get a lollipop shaped piece
Rub a little oil on each piece
put an equal amount of garlic on each piece of lamb
sprinkle the chopped thyme on each piece
Season with salt & pepper
Place each piece on the grill for 4-5 minutes then turn over until heated through to your liking
