I love having a great morning muffin to eat on my way to the gym. These grain free and sugar free morning muffins are a great metabolism booster. The main ingredient is almond meal, almonds are a good fat that promotes cell development and communication but also lowers cholesterol. When living a lifestyle of low carb nutrition, the worry of fat intake is non existent and yet very encouraged.
Almonds are often considered one of the best brain foods. Almonds nutrition is somewhat unique in that almonds contain riboflavin and L-carnitine, two key nutrients capable of positively affecting neurological activity and preventing cognitive decline.
Almonds seem to help protect the brain by fighting oxidative stress. Certain studies conducted on rats found that almonds can help improve memory, fight neurological diseases and protect against age-associated cognitive dysfunction. This is one reason why adults, especially the elderly, are encouraged to eat nuts several times per week. 1 stick of butter
1/2 Cup Swerve
1 tsp vanilla extract
1 tsp caramel extract (optional, but good)
2 Cups Almond flour
1/2 tsp baking soda
1/8 tsp salt
Beat the butter and swerve in the mixer until all combined.
Add eggs and vanilla. Mix well.
Add the dry ingredients.
Put batter into muffin tin.
375 degree oven for 13 minutes.
