Chocolate Chip Cookies

I can't help myself when it comes to anything that resembles a chocolate chip cookie.I created a healthy version with almond butter as the main ingredient. They are pretty darn good if I may say so myself.  Very simple, no flour, no sugar just natural ingredients with an almond butter base.  

I found sugar free chocolate chips off amazon and they taste amazing.  I also found the monk fruit sugar off amazon it leaves no aftertaste.  It is so important to keep your sugar intake as low as possible without going crazy.  Balance is spice of life.  So, eat cookies that are sugar free and you will never miss a real sugar cookie again.  One great benefit of eating sugar free cookies is that you don't get the sugar  withdrawal...that need to have more, that makes no sense you just can't get enough no matter how much you can get. 

Get your ingredients together and mix them together.  

Mix in about 1/3 a cup of the sugar free chocolate chips, or more if you like. Mix it up and scoop the batter on the cookie sheet pan.

I use a scooper to shape my cookies because it is easy. Set up the oven to 375 degrees and cook them for 13 minutes.  If you over cook these they will taste dry.  When they are done, let them cool on the sheet pan.  Do not remove them from the sheet pan or they will fall apart.  Let them cool for about 15 minutes or more.  They will be delicate and delicious!

Remember to let these cool on the sheet pan or they fall apart.  Let cool for at least 15 minutes.  The next day I reheat one in the microwave for 16 seconds and it tastes like it just came out of the oven.

This is great, a cookie that is healthy! Almond Butter Cookies 

INGREDIENTS 

1 cup  of almond butter 
1 tsp baking soda 
1 egg 
3/4 cup Monkfruit sugar 
1/3-1/2 cup sugar free chocolate chips 
Pinch of salt 
2 teaspoon of vanilla extract 

DIRECTIONS 

Pre heat oven to 375 degrees. 
Add all ingredients to a bowl and mix together. 
Scoop batter onto a parchment paper lined cookie sheet. 
Bake 13 minutes. 
Keep the cookies on the cookie sheet to cool at least 15 min.  They will crumble if you remove them sooner.
