This is my favorite soup because it is such a nutritious hit to your system and it is so easy to make. The bright orange color makes it fun, the flavor has a slight sweetness and the cumin brings on an additional layer of flavor to the savory. Overall a big hit at my house.

Carrot Cumin Soup
2 pounds of organic carrots chopped
1 tsp. Ground cumin
1 chopped onion
1 1/2 quarts of Chicken stock
3 tablespoons of Olive Oil
2 teaspoons of butter
Heat pot on medium high and add olive oil and butter until melted, then add onions and sweat for about 2-3 minutes stirring so onions do not burn.
Add cumin and continue to stir and sweat carrots another 2 minutes.
Add carrots and stock.
Bring to boil, cover, them allow to gently simmer for 30 minutes.
In batches puree in a blender on medium high for 1 minute.
Season with salt and pepper.
